New Brewery Completed
To craft delicious sake, they say that mineral-rich water without any iron is an essential.
Adding to that, you need vast amounts of water for rice washing, yeast mash production, and water dilution.
Therefore, it was crucial for us to find an abundant source of optimal water.
So, we examined close to over 20 water sources on the island for our sake brewery, and our wish was granted when we discovered a location flowing with ample amounts of amazing water.
In order to craft Japanese sake to share with the rest of the world from Iki, we built our brewery on that exact location.
